Sweet Potato & Black Bean Bowl

Ingredients

Directions

1. Wash hands with soap and water.

2. Rinse fresh produce.

3. Preheat oven to 420 degrees Fahrenheit.

4. Toss sweet potato cubes in oil to lightly coat and season with salt and pepper. Bake until tender, about 20 minutes, and set aside.

5. Heat olive oil in a saucepan over medium heat. Add garlic and saute until fragrant, about 1 minute. Add black beans, cumin and water. Stir to combine.

6. Lower heat and simmer for 20 minutes with lid on.

7. Remove from heat and stir in half the cilantro. Season with additional salt and pepper, if needed.

8. Divide skyr between five bowls. Spoon roasted sweet potato, black beans and tomatoes on top. Garnish with remaining cilantro.
