Summer Tomato Bruschetta Whipped Feta
1. To prepare bruschetta: toss together tomatoes, garlic, onions, basil, olive oil, vinegar, salt and pepper in a medium-sized bowl. Cover with plastic wrap and refrigerate for 1-2 hours to allow flavors to marinate.
2. To prepare the whipped feta: combine feta, Neufchatel cheese, olive oil, lemon juice, salt and pepper in a mixing bowl. Beat together on high until light and fluffy. Set aside.
3. If desired, place sliced bread on a cookie sheet and broil in the oven for 2-3 minutes, until toasted. Spread feta over each slice of bread and top with bruschetta. Enjoy!
