1. Wash hands with soap and water.

2. Rinse fresh produce.

3. Toss all salad ingredients together in a large bowl.

4. Whisk together vinegar, mint, mustard and honey. Whisk in oil in a slow, steady stream. Season to taste with salt and pepper.

5. Toss dressing with salad. Garnish with reserved sunflower seeds and feta cheese.
