Spring Potato Salad

Note: Wash hands with soap and water.
1. Place potato slices in a large pot and cover with water.
2. Place over medium heat and boil for 10 to 12 minutes or until tender.
3. Drain and run under cold water; drain again.
4. Place in a large bowl, cover and place in the refrigerator for 1 hour.
5. In a large bowl, combine vinegar, oil, salt, pepper, mint and thyme until well mixed.
6. Add onion, radishes, capers and cooled potatoes and toss gently until well combined.
7. Top with goat cheese, cover and let set in the refrigerator for 1 hour before serving.
