Directions1. Wash hands with soap and water.
2. Spread 1 tablespoon chipotle mayonnaise onto one side of each of 2 slices multigrain bread.
3. Coat a large skillet with Big Y no-stick cooking spray and place over medium heat. Once hot, place one slice of bread, mayonnaise-side down, into skillet. Top with 2-4 chorizo sausage slices, 3 chunks roasted red pepper, a Colby cheese slice, a mozzarella cheese slice and another bread slice, mayonnaise-side up.
4. Cook for 4 minutes per side or until browned.
