1: Wash hands with soap and water.
2: Rinse all fresh produce items under cold running water prior to prepping.
3: Cut salmon into 21/2 x 1-inch strips; set aside.
4: In a medium bowl, combine mascarpone cheese, cream cheese, chives, dill and pepper; mix until softened and fluffy.
5: To assemble, spread bread slices with cheese mixture. Top with a strip of salmon and garnish with parsley.
