Simple Smart Chicken Chili

Recipe by:



1. Wash hands with soap and water.

2. Rinse fresh produce.

3. In an 8 quart stockpot, heat olive oil over medium-high heat. Add rotisserie chicken, onions, peppers and salt; saute, stirring occasionally, until warmed.

4. Add chicken stock, garlic, chili powder, cayenne and cilantro and cook for 3 to 5 more minutes.

5. Add beans, tomatoes and tomato sauce. Simmer gently for 30 to 45 minutes.

6. Add lime juice prior to serving.
