- Wash hands with soap and water.
- Rinse fresh produce.
- In a large saucepan over medium heat, add oil. Once hot, add onion and garlic and stir constantly for 2 minutes. Add red pepper, thyme, fennel seed, salt and pepper and cook for another minute. Stir in broth and bring to a boil. Cover, reduce heat to low and simmer for 2 minutes.
- Increase heat to medium, add shrimp and cook, stirring occasionally, until shrimp’s flesh is pearly and opaque, about 2 minutes.
- Stir in couscous. Cover, remove from heat and let stand for 5 minutes. Fluff with fork and serve.
