Directions
1. Wash hands with soap and water.
2. Rinse fresh produce.
3. Cook pasta according to package directions to al dente; set aside and keep warm.
4. In a large skillet over medium heat, combine 3 tablespoons butter and oil. Once butter is melted, add garlic and leeks and cook for 3 to 4 minutes or until softened.
5. Add shrimp and cook until flesh is pearly and opaque, about 1 to 2 minutes. Add tomatoes, cayenne pepper and salt to taste and cook for 1 minute.
6. Add pasta, remaining butter and lemon juice and cook for 3 minutes or until shrimp is cooked through and pasta is heated through.
7. Serve garnished with parsley and a squeeze of lemon if desired.
