1. Wash hands with soap and water.

2. Rinse fresh produce.

3. Preheat oven to 450 degrees Fahrenheit.

4. Warm oil in 12-inch skillet over medium heat. Once hot, add onion and garlic. Cook 5 minutes or until softened while stirring occasionally. Remove to plate.

5. In same skillet over medium-high heat, cook ground sirloin until well browned on all sides, stirring frequently. Add flour, cook 1 minute. Wash hands after handling raw flour.

6. Add stewed tomatoes, thyme and onion/garlic mixture. Over high heat, bring mixture to a boil then reduce heat to low.

7. Simmer uncovered 10 minutes to blend flavors while stirring occasionally. Stir in peas and carrots.

8. Spoon mixture into a greased pie plate or 9x9-inch baking dish. Toss sliced potatoes with butter and arrange in center of casserole, overlapping slightly.

9. Bake 10 to 15 minutes or until potatoes and lightly golden brown in color.
