1. Wash hands with soap and water.

2. Rinse fresh produce.

3. Cut each potato lengthwise into ¼-inch-thick disks; cut disks lengthwise into ¼-inch-thick sticks. Try to keep your cuts uniform so the potatoes cook evenly; place in a large bowl. Cover potatoes with hot water and let sit for 10 minutes. Drain potatoes and transfer them to a clean towel; dry completely and transfer to a large bowl.

4. Drizzle with 2 tablespoons oil and sprinkle with garlic powder, thyme, onion powder and salt and pepper; toss until evenly coated.

5. Preheat oven to 450 degrees Fahrenheit. Coat a large rimmed baking sheet with remaining oil.

6. Spread potatoes into a single layer on prepared baking sheet; roast for 18 minutes or until turning golden underneath. Remove from oven and carefully flip them over. Place sheet back in the oven and cook for 10 minutes or until the fries are golden and crisp.
