DirectionsNote: Wash hands with soap and water.
1. In a small bowl, combine honey, mustard, thyme and lemon juice; spread on the inside of the bread slices. Top 4 bread slices with spinach, 3 slices ham, 1½ slices cheese and another bread slice, mustard mixture side down.
2. In a large shallow dish, whisk together eggs, half and half and salt and pepper to taste.
3. Coat a large skillet with cooking spray and place over medium heat.
4. Lightly dip sandwiches into egg mixture, coating both sides. Working in batches, place sandwiches in heated skillet and cook for 2-4 minutes per side or until golden brown and cheese has melted slightly. Recoat skillet with cooking spray and repeat with remaining sandwiches.
