Note: Wash hands with soap and water.
1. Prepare grill for indirect heat, keeping temperature inside grill approximately 350 degrees Fahrenheit. If desired, add water-soaked wood chips to either a smoker box or directly on the coals to add a bit of smoke flavor — either hickory or mesquite.
2. Place a 10-inch cast-iron skillet on grill grate directly over the heating element. Cover grill, and let skillet heat up for 10 minutes.
3. Stuff cavity of chicken with herbs, onion, lemon and garlic; tie legs together with cooking twine. Mix butter and oil together and brush generously all over chicken; generously season to taste with salt and pepper. Place chicken, breast-side down, in skillet.
4. Place skillet on unheated side of grill and grill, covered, for 45 minutes. Flip chicken to be breast-side up and continue to cook for 45 minutes or until a meat thermometer, inserted into the breast reaches 165 degrees Fahrenheit. Remove chicken from grill, cover with foil and allow to rest for 15-20 minutes before carving. For additional browning, place chicken under broiler for 1-2 minutes.
