Roasted Cauliflower Gratin

Preheat oven to 425°F. In a large bowl, toss cauliflower florets with oil; spread out onto a baking sheet. Roast in the oven for 10 minutes. Carefully stir the florets and return to the oven. Continue to roast for 15 minutes or until the edges brown and cauliflower is tender. Place florets in a large baking dish. In a medium saucepan over medium heat, add butter. Once melted, whisk in cornstarch, garlic powder, onion powder, cayenne pepper and salt and pepper to taste; whisk to form a thick paste. Slowly whisk in the milk, ¼ cup at a time. Heat mixture, whisking frequently, until it thickens and begins to bubble around the edges. Do not let the sauce boil. Remove from heat and whisk in the shredded cheddar cheese until mixture is smooth. Pour cheese sauce evenly over top of the cauliflower florets and bake in the oven for 15 minutes or until the top is nicely browned.
