1. Wash hands with soap and water.
2. Rinse all fresh produce items under cold running water prior to prepping.
3. In a small bowl, combine mayonnaise, horseradish, Dijon mustard, green onion and pepper.
4. Spread a generous amount on 4 slices of bread.
5. Top each with some roast beef, zucchini, tomato spring mix, onion and remaining bread slice.
