- Wash hands with soap and water.
- Rinse all fresh produce.
- In a large saucepan over medium heat, combine 2 tablespoons olive oil, quinoa, garlic and stock. Stir, cover and simmer for 15 minutes or until stock is absorbed; remove from heat.
- In a medium bowl, combine lime juice, remaining oil, cumin, salt and pepper.
- In a large serving bowl, combine cooked quinoa, beans, tomatoes, corn, bell pepper, onion, jalapeños, cilantro and parsley. Add lime mixture and mix to coat well.
