Potato, Sausage & Kale Soup
DirectionsNote: Wash hands with soap and water.
1. In a 5-quart pot over medium heat, add oil. Once hot, add onion and cook for 5 minutes. Add garlic and mushrooms and cook for 4 minutes. Add sausage and cook for 5-7 minutes or until sausage is slightly browned.
2. Add kale, red pepper flakes and salt and pepper to taste; mix until well combined. Cook for 1-2 minutes or until kale is slightly wilted.
3. Add potatoes and chicken broth and bring soup to a boil. Reduce heat to medium-low, cover and let simmer for 15-20 minutes or until potatoes are tender; add parsley and mix to combine.
4. Season with additional salt and pepper if desired and serve.
