1. Wash hands with soap and water.

2. In large bowl, whisk egg, buttermilk, peanut butter and maple syrup until smooth.

3. In second large bowl, whisk flour, sugar, baking powder, baking soda and salt; stir in oats. Fold flour mixture into peanut butter mixture; stir in butter until just combined. 

4. Heat griddle or large skillet over medium heat; spray lightly with cooking spray. In batches, pour 1/4 cupful batter per pancake onto heated griddle; cook 2 minutes or until air bubbles develop and underside is an even, golden color. Flip pancakes; cook 2 minutes or until bottoms are golden brown. Repeat with remaining batter, spraying griddle with cooking spray as necessary.

5. Serve pancakes topped with peanut butter, syrup and/or butter, if desired.
