Crisp spinach mixed with ripe tomatoes, red onions, fresh mozzarella and tossed with grilled bread in a wine vinaigrette.

Directions
1. Wash hands with soap and water.
2. Rinse fresh produce.
3. In a shaker jar with a tight-fitting lid, combine garlic, mustard, vinegar, 6 tablespoons oil, salt and pepper. Cover and shake to combine.
4. In a large skillet over medium heat, add remaining oil. Once hot, add bread cubes, salt and pepper and cook, stirring frequently, until nicely browned, about 6 minutes. Remove from heat.
5. In a large bowl, combine spinach, tomatoes, onion, capers, cheese, toasted bread cubes and vinegar mixture and toss to coat. Season with additional salt and pepper, if desired.
6. Let sit for 30 minutes to allow flavors to blend before serving.
