Oven-baked apple chips

Note: Wash hands with soap and water.
1. Position oven racks in the upper and lower third of oven and preheat to 225 degrees Fahrenheit. Line 2 large baking sheets with parchment paper; set aside.
2. In a large bowl, combine water and lemon juice. Using a sharp knife or a mandoline, slice apples into 1/2 inch slices; cut out centers of each slice. Immediately place apple slices in lemon juice water and let soak for 30 minutes.
3. Drain and pat slices as dry as possible with paper towels. Place on prepared baking sheets in a single layer. In a small bowl, combine cinnamon, nutmeg, allspice and sugar. Sprinkle over apple slices on baking sheets and bake for 1 hour. Turn slices over and continue to bake for another hour. The longer they bake, the crispier they will get.
4. Turn off the oven, slightly open the door and leave the apples in the oven until the oven cools completely, 1 to 2 hours. Store in an airtight container for up to 1 week or refrigerate for up to 1 month.
