No-Bake Cookie Energy Balls
This no-bake snack provides the perfect blend of nutrients to keep you feeling full and energized. And with a hint of chocolate, they satisfy sweet tooth cravings any time of day. Recipe featured on Better CT and Western Mass News with Carrie Taylor, RDN, LDN and Andrea Luttrell, RDN, LDN.
1. Wash hands with soap and water.
2. In a large bowl, stir together oats, peanut butter, honey, vanilla extract, chocolate chips and M&M’s.
3. Roll dough into 2 tablespoon-sized smooth balls and place onto a parchment-lined baking sheet.
4. Place in refrigerator for 30 minutes or enjoy right away.
