Naked Atlantic Cod with Artichoke Lemon Crust

1. Wash hands with soap and water.

2. Rinse fresh produce.

3. Drain artichokes and squeeze out excess water. Chop artichokes into a finely diced mixture, then place in a mixing bowl.

4. Add garlic, mustard, Parmesan, lemon zest and juice, olive oil, mayonnaise, parsley, panko and pepper. Mix well to combine and keep chilled.

5. Preheat oven to 425 degrees Fahrenheit. Arrange cod portions on an oiled baking dish. Top each portion with an even layer (about 1/4-1/2 inch) of prepared artichoke mixture.

6. Add 1/8-inch water to the bottom of the baking dish. Bake for 15 to 17 minutes or until cod is cooked through, flakes easily and reaches an internal temperature of 145 degrees.
