Ingredients

Directions

1. Wash hands with soap and water.

2. Rinse fresh produce.

3. Thread chicken evenly among skewers. Wash hands after handling raw chicken.

4. Combine spice rub ingredients and place onto a plate.

5. Rub chicken skewers with spice rub until generously coated. Let rest 20 minutes. Wash hands after handling raw chicken.

6. Grill skewers over medium-high heat, turning every few minutes until chicken reaches an internal temperature of 165 degrees Fahrenheit as verified from an instant-read food thermometer, about 10 minutes.

7. While chicken is cooking, combine ingredients for vinaigrette.

8. Toss spinach in vinaigrette. Divide evenly between 4 plates. Top with apricots, dates and apple slices.

9. Remove chicken from the grill and serve on top of the salad.
