Note: Wash hands with soap and water.
1. Preheat oven to 350 degrees Fahrenheit. Butter bottom and sides of a 3-quart round baking dish. Add cheese and shake dish to coat inside; set aside.
2. In a medium bowl, combine cooled potatoes, egg yolks, cream and salt and pepper to taste; set aside.
3. In another medium bowl using an electric mixer, beat egg whites until stiff peaks form. Be careful not to overbeat.
4. Stir the egg whites into potato mixture. Gently fold in remaining egg whites until just incorporated. 5. Transfer to prepared dish and bake for 60 minutes or until puffy and golden brown.
