1. Wash hands with soap and water.
2. In a large saucepot over medium-low heat, combine apple cider, maple syrup, lemon juice, cloves, cinnamon sticks and star anise; stir. Let simmer for 20 minutes; avoid boiling.
3. Remove from heat, strain into a serving bowl and stir in whiskey. Ladle into mugs and serve warm, not hot.
