1: Wash hands with soap and water.
2: Rinse all fresh produce items under cold running water prior to prepping.
3: Preheat oven to 350 degrees Fahrenheit.
4: Cook pasta according to package directions until al dente; drain, place in a large casserole dish and set aside.
5: In a medium saucepan over medium heat, add 2 tablespoons butter. Once melted, add onion and garlic. Cook for 5 minutes or until onion has softened; place in casserole dish with pasta. Add lobster meat and toss gently to mix well and set aside.
6: In the same medium saucepan, add remaining butter. Once melted, whisk in flour and stir for 10 minutes or until mixture becomes paste-like and light golden brown. Gradually whisk in milk and bring to a simmer over medium heat. Cook, whisking often, for 5 minutes or until mixture is thick and smooth. Stir in all three cheeses and cook for 5 minutes or until cheese is melted and mixture is smooth. Season to taste with salt and pepper.
7: Pour cheese sauce over pasta in casserole dish and mix to combine. Sprinkle top evenly with breadcrumbs and bake for 12 minutes or until sauce is bubbly and top is golden brown. Serve garnished with parsley.
