1: Wash hands with soap and water.
2: Line 3 rimmed baking pans with parchment paper; line 2 plates with paper towels.
3: In a large skillet, cook bacon over medium-high heat for 5 minutes or until crisp, stirring occasionally. Wash hands with soap and water after handling raw bacon. Transfer cooked bacon to paper towel-lined plate with a clean spatula (clean spatula you cooked bacon with before touching cooked bacon).
4: In a large bowl, add macaroni and cheese. Fold in seasoning, onions and bacon. Form macaroni and cheese mixture into 40 (2 1/2-inch) patties and place on parchment paper-lined pans. Freeze for 1 hour.
5: In a wide, shallow dish, whisk eggs. In a separate wide, shallow dish, stir in breadcrumbs, cheese and garlic powder. In the third wide, shallow dish, add flour. Coat patties in flour, dredge through eggs, allowing excess to drip off, and press lightly into breadcrumb mixture to coat; place back on pans.
6: In a large skillet, heat oil over medium heat. In 6 batches, cook patties 5 minutes or until golden brown, turning once. Transfer patties to paper towel-lined pans.
