Directions
1. Wash hands with soap and water.
2. Rinse fresh produce.
3. In a large pot over medium heat, add oil. Once hot, add onions, salt and pepper and cook for 8 minutes or until onions have softened. Add dried herbs or spice and cook for an additional minute.
4. Add beans, tomatoes and broth and bring to a boil. Stir in pasta and cook for 7 minutes or until pasta is just tender. Add vinegar and additional salt and pepper to taste.
5. Serve with bread, crackers or homemade croutons.
Tip: Any dark, leafy green is a great addition to pantry soup. Just add during the last 5 minutes of cooking.
