Directions
1. Wash hands with soap and water.
2. Rinse fresh produce.
3. Cook noodles according to package directions for al dente. During last 5 minutes of cooking, add broccolini and edamame; drain, set aside and keep warm.
4. In a medium bowl, whisk together vinegar, soy sauce, honey, garlic, ginger and salt and pepper to taste; set aside.
5. In a large saucepan over medium heat, add oil. Once hot, add meatballs and cook for 5 minutes. Add vinegar mixture and stir to coat well; cover and cook for 7 minutes or until meatballs are heated through. Add noodles, broccolini and edamame and stir to coat.
6. Divide mixture evenly between 4 bowls. Garnish with scallions and serve.
