Honey Cornbread

1. Wash hands with soap and water.

2. Preheat grill to medium-low.

3. In a 10-inch cast-iron skillet over low heat, melt 8 tablespoons butter; pour into a medium bowl and allow to cool for 5 minutes.

4. Once cool, whisk in honey, egg and buttermilk; set aside. Wash hands after handling raw egg. Place skillet back over low heat to keep warm.

5. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda and salt. Pour wet ingredients into dry ingredients and whisk until combined. Avoid over-mixing. Wash hands after handling raw flour.

6. Place 1 tablespoon butter and oil in skillet and brush to coat bottom and sides; spread batter in skillet and place on grill.

7. Grill, covered, for 10 to 12 minutes or until a toothpick inserted in the center comes out clean. Let sit for 5 minutes before serving.
