Haddock and Skillet Potatoes

Note: Wash hands with soap and water.1. In a large pot, add potatoes and enough water to cover them by 2 inches, place over medium-high heat and bring to a boil.
2. Reduce heat to medium and cook for 20 minutes or until potatoes are just tender, drain and set aside.
3. In a large shallow dish, add milk. Add fillets and soak for 10 minutes.
4. Remove from milk and place on a large plate.
5. Sprinkle each fillet with some salt and dredge in flour.
6. In a large nonstick skillet over medium-high heat, add 2 tablespoons oil. Once hot, add fillets and cook for 3 minutes on each side or until golden.
7. Top with lemon juice and 2 tablespoons butter and cook for 3 to 4 minutes.
8. Remove fillets to a serving platter and keep warm.
9. In a large skillet over medium-high heat, add remaining butter and oil. Once hot, add potatoes, onion and garlic and cook for 5 to 7 minutes or until potatoes are lightly browned.
10. Add rosemary and season to taste with salt and pepper.
11. Serve potatoes topped with a fillet.
