Grilled Leeks with Mustard Vinaigrette

Recipe by:




1. Wash hands with soap and water.

2. Rinse fresh produce.

3. In a small bowl, whisk together mustard, vinegar, garlic powder, salt and pepper. Slowly add 1/4 cup oil and whisk until combined; set vinaigrette aside.

4. Add about 1 inch of water to a large pot and place over medium-high heat. Add leeks, cover and cook for 5 minutes.

5. Transfer to a bowl of cold water to stop the cooking process. Remove, pat dry and place in a medium bowl. Drizzle remaining oil over top and season to taste with additional salt and pepper.

6. Preheat grill to medium-high. Add leeks and grill for 3 minutes per side or until grill marks form. Remove from grill, place on a serving platter and drizzle vinaigrette over top.
