1. Place basil and chopped shallot in mini food processor to finely chop.2. Add butter and process until blended stopping occasionally to scrape down sides. Transfer to small bowl; stir in lemon zest and season with salt.
3. Rub grill grate with olive oil. Heat the grill to medium and cook halibut about 4 to 5 minutes on each side or until fillets are just opaque in center. Transfer fish to individual plates, spread each with 1 tablespoon lemon-basil butter and serve.
