Note: Wash hands with soap and water.
1. In a large bowl, combine mayonnaise, chili powder, garlic powder cayenne pepper and salt to taste; add chicken and toss to coat. Cover and refrigerate for 2 hours or overnight.
2. Brush grill grates generously with oil and preheat to medium-low. Place breadcrumbs and cheese in a shallow dish and mix to combine.
3. Add chicken, turning to thoroughly coat. Place chicken on grill and cook for 20 to 25 per side or until golden brown and cooked through.
