Grilled Chicken Citrus Salad

This grilled chicken citrus salad is bursting with flavor and has a real warm weather look and feel about it. The chicken is succulent and moist and the salad is very refreshing, especially with the addition of the citrus dressing.

Note: Wash hands with soap and water.
1. In a small bowl, combine, brown sugar, 2 tablespoons orange juice, soy sauce, honey, ginger and garlic; mix well. Pour into a large resealable plastic bag, add chicken, seal and turn to coat chicken. Let marinate in the refrigerator for at least 1 hour.
2. Coat grill grate with cooking spray and preheat to medium.
3. Remove chicken from marinade; discard marinade.
4. Place chicken on grill and cook for 6 to 8 minutes. Flip and cook for another 6 to 8 minutes or until chicken is cooked through.
5. Remove from grill and let cool. Once cool, cut into strips. In a small bowl, whisk together mayonnaise, remaining orange juice, orange peel, vinegar and salt and pepper to taste. Transfer to a jar, cover and refrigerate.
6. In a large bowl, combine salad greens, oranges, cheese, onion and walnuts.
7. Top with chicken and serve with mayonnaise/citrus dressing.
