1: Wash hands with soap and water.
2: Rinse all fresh produce items under cold running water prior to prepping.
3: In a small saucepan over low heat, combine cream, sugar, butter and rum extract. Cook mixture for 5 minutes or until sugar has dissolved. Do not allow mixture to boil. Remove from heat and keep remaining warm.
4: Coat an indoor grill pan with cooking spray and preheat to medium.
5: Cut bananas in half lengthwise, leaving the peel on. Generously brush cut-side of bananas with butter rum sauce and sprinkle with some cinnamon and nutmeg. Place bananas in pan, cut-side-down and grill for 3 minutes. Turn bananas over, baste with additional butter rum sauce and continue to grill for 2 minutes or until fork tender.
6: Serve immediately with a drizzle of butter sauce, a sprinkle of cinnamon and a scoop of ice cream, if desired.
