Greek-Style Stuffed Chicken Meatloaf

1. Wash hands with soap and water.

2. Rinse fresh produce.

3. Preheat oven to 350 degrees Fahrenheit. Coat a 9x5-inch loaf pan with cooking spray.

4. In a large skillet over medium heat, add oil. Add garlic and leeks and cook for 2 minutes. Add spinach and cook, stirring, for 2 minutes or until it just wilts; remove from pan and let cool. Once cool, add herbs, feta cheese and pine nuts.

5. In a large bowl, combine eggs, breadcrumbs, chicken and salt and pepper to taste.

6. Place half of the chicken mixture in the prepared pan, making a well down the center. Add the spinach mixture to the well and top with remaining chicken mixture; pat to form a loaf. Wash hands after handling raw ingredients.

7. Bake meatloaf for 50 minutes or until an instant-read thermometer registers 165 degrees Fahrenheit. Remove from oven and let cool for 10 minutes before serving.
