Gnocchi with Butternut Squash and Arugula

  1. Wash hands with soap and water.

  2. Rinse fresh produce.

  3. Cook gnocchi according to package directions; keep warm.

  4. In a large skillet over medium-high heat, add oil. Once hot, add squash, shallots and garlic and saute for 5 minutes. Add wine, salt and pepper and bring to a boil. Add gnocchi and cook until heated through, about 3 minutes.

  5. Serve garnished with arugula, a few dollops of ricotta cheese and grated Parmesan, if desired.
