Tender gnocchi sautéed with butternut squash in a garlic white sauce and topped with fresh arugula, ricotta and Parmesan cheese.

Directions
1. Wash hands with soap and water.
2. Rinse fresh produce.
3. Cook gnocchi according to package directions; keep warm.
4. In a large skillet over medium-high heat, add oil. Once hot, add squash, shallots and garlic and saute for 5 minutes. Add wine, salt and pepper and bring to a boil. Add gnocchi and cook until heated through, about 3 minutes.
5. Serve garnished with arugula, a few dollops of ricotta cheese and grated Parmesan, if desired.
