- Wash hands with soap and water.
- Rinse fresh produce.
- Cook gnocchi according to package directions; keep warm.
- In a large skillet over medium-high heat, add oil. Once hot, add squash, shallots and garlic and saute for 5 minutes. Add wine, salt and pepper and bring to a boil. Add gnocchi and cook until heated through, about 3 minutes.
- Serve garnished with arugula, a few dollops of ricotta cheese and grated Parmesan, if desired.
