1. Wash hands with soap and water.
2. Rinse fresh produce.
3. Fill a large stockpot two-thirds full with water; add a few dashes of salt. Add sweet potatoes and cook over medium-high heat for 15 minutes or until fork tender; drain and set aside.
4. Return stockpot to stove and place over medium heat. Add butter and garlic and cook for 3 minutes or until garlic starts to turn golden; remove from heat.
5. Add potatoes, cream and sour cream and mash until desired consistency is reached; season to taste with salt and pepper.
