Garlic Rosemary Leg of Lamb

Note Wash hands with soap and water.
1. In a food processor, combine butter, garlic, rosemary and salt and pepper, to taste, pulse until garlic and rosemary are finely chopped.
2. Rub butter mixture evenly all over both legs of lamb, place both legs on a roasting rack in a roasting pan, fat side up, and let sit at room temperature for 20 minutes.
3. Preheat oven to 400 degrees Fahrenheit.
4. Season top and sides of both legs of lamb with additional pepper, to taste.
5. Place in the oven and roast for 1 to 1 1/4 hours or until an instant-read thermometer inserted 2 inches into thickest part of meat registers 145 degrees Fahrenheit for medium.
6. Transfer to a cutting board, tent with foil and let stand for 15 to 20 minutes, temperature should rise by another 5 degrees.
7. Serve with pan sauce if desired.
