1. Wash hands with soap and water.
2. Rinse fresh produce.
3. In a small saucepan over medium heat, combine sugar and water; cook for 10 minutes or until sugar dissolves. Remove from heat and let cool to room temperature.
4. In a blender, combine 1/2 cup sugar mixture, lime juice and mint; pulse until well combined. Add rum and ice and pulse until ice is finely crushed and mint is finely chopped.
5. Serve immediately, garnished with a lime wedge and a mint sprig.
