Note: Wash hands with soap and water.1. Coat a large skillet with cooking spray and place over medium heat. Once hot, add onion and bell peppers and sauté for 5 minutes or until tender. Stir in ½ teaspoon fajita seasoning and salt to taste; remove from heat and let cool.
2. In a large bowl, combine onion mixture, remaining fajita seasoning, breadcrumbs, tomato paste, turkey, egg white and salt to taste. Using damp hands, divide turkey mixture into 6 equal portions, shaping each into a patty.
3. Coat grill grate with cooking spray and preheat to medium. Add burger patties and grill for 5 minutes per side or until cooked through. During last 2 minutes of cooking, add a cheese slice to each burger, cover grill and let cheese melt as desired.
4. Place burgers on rolls and top with 2 tablespoons guacamole, lettuce, tomato and red onion and serve.
