Cucumber, Tomato Cheese Bites
DirectionsNote: Wash hands with soap and water.
1. Peel each cucumber, leaving a strip of green in between, cut cucumbers into ½-inch slices. Using a spoon, scoop out a generous amount of the seeds from the center, leaving a small portion to keep the filling from falling out.
2. Arrange slices on a serving platter. In a medium bowl, combine cheese and yogurt, season to taste with pepper.
3. Top each cucumber slice with a tablespoon-size amount of cheese mixture. Cut a small X slit on the top of each tomato, making sure not to cut all the way through;,place a parsley sprig into the slit of each tomato. Place tomato on top of cheese.
4. Refrigerate until ready to serve.
