Crispy Potatoes with Garlic Lemon Avocado Aioli

1. Wash hands with soap and water.
2. Rinse all fresh produce items under cold running water prior to prepping.
3. Preheat oven to 425 degrees Fahrenheit.
4. Combine potatoes with olive oil and spices. Line a baking sheet with parchment paper and spread out potatoes cut-side down.
5. Bake for 10 to 15 minutes. Flip and cook for another 10 to 15 minutes, or until crispy, golden-brown and tender.
6. Meanwhile, in a blender or food processor, combine ingredients for aioli and blend until smooth. Add lemon juice, pepper and salt to your liking for flavor.
7. Serve potatoes drizzled with aioli or serve aioli on the side as a dip. Sprinkle with fresh parsley.
