1. Wash hands with soap and water.
2. In a blender, combine yogurt, lemon juice, lemon peel, sugar, blueberries and mint; blend until combined and blueberries are finely chopped.
3. Evenly divide mixture between the paper cups. Cover each with foil and insert a popsicle stick into each. Place in the freezer for 4 hours or until frozen.
