Cod Dijonnaise

1. Preheat oven to 400 degrees Fahrenheit. Wash hands with soap and water.
2. Rinse all fresh produce items under cold running water and pat dry.
3. Spray a 9x13-inch baking dish with no-stick spray and arrange cod portions in dish. Wash hands again after handling raw fish.
4. Season cod with salt and pepper then moisten fish and pan with white wine. Bake for 10 minutes.
5. Meanwhile, combine mayonnaise, Dijon and lemon juice from 2 lemons in a small bowl. In a plastic bag, combine cracker crumbs, chopped parsley and melted butter.
6. After cod bakes for 10 minutes, remove from oven and top each fillet with 2 tablespoons of the sauce. Evenly cover the sauce with buttered crumbs.
7. Return baking dish to the oven for 3-4 minutes until the crumbs have turned golden brown and the fish flakes evenly and reaches an internal temperature of 145 degrees Fahrenheit with an instant-read thermometer.
8. Place fresh parsley sprigs on each fillet and serve with lemon wedges.
