Citrus Chicken Salad

Note: Wash hands with soap and water.
1. In a small bowl, whisk together mayonnaise, orange juice, orange peel, vinegar and salt and pepper to taste.
2. Transfer to a jar, cover and refrigerate until ready to serve. In a medium skillet over medium heat, add olive oil.
3. Generously season both sides of each chicken breast with salt and pepper and place in skillet.
4. Cook for 5 to 6 minutes per side or until chicken is no longer pink and juices run clear; remove from skillet and slice.
5. In a large bowl, combine salad and cranberries.
6. Add half the dressing and toss to coat.
7. Serve with sliced chicken, Gorgonzola cheese, lemon or orange wedges and additional dressing if desired.
