Chocolate Dipped Almond Coconut Dates

Creamy and crunchy almonds mixed with sweet dates and coated in semi-sweet chocolate and flaked coconut.

Recipe by:



1. Wash hands with soap and water.

2. Line a baking sheet with parchment paper. If the dates do not already have slits in them, cut a slit lengthwise along each date, making sure not to cut all the way through.

3. In a medium bowl, combine almond butter and almonds. Stuff each date with about 1 teaspoon and set aside.

4. In a medium microwave-safe bowl, combine chocolate chips and oil. Microwave on high heat for 1 minute; stir. Return to high heat and microwave in 15-second intervals until melted, stirring each time.

5. Completely cover stuffed dates in melted chocolate, coating well. Transfer to prepared baking sheet.

6. Sprinkle tops dates with coconut and refrigerate until the chocolate has hardened, about 30 minutes.

7. Serve right away or store in an airtight container in the refrigerator for up to 1 week.
