Chicken Chili

1. Wash hands with soap and water.

2. Rinse fresh produce.

3. In a large pot, heat oil over medium-high heat. Add onion and cook, stirring occasionally, for 5 minutes or until soft. Add garlic and cook for another 2 minutes.

4. Add chicken broth and chili and bring to a simmer. Reduce heat to medium-low and simmer for 10 minutes or until thickened.

5. Stir in shredded chicken and cook until just heated through, 2 to 3 minutes. Season with salt and pepper, to taste.

6. Top with shredded cheddar cheese, sour cream and chopped scallions and serve with tortilla chips.
