Chicken Broccoli Stir-Fry

Note: Wash hands with soap and water.
1. In a large wok or skillet over medium-high heat, add 1 tablespoon oil. Once hot, add half of the chicken strips and stir-fry for 5 to 7 minutes or until cooked through. Remove from wok and keep warm. 2. Add remaining chicken and stir-fry for 5 to 7 minutes or until cooked through, season to taste with salt and pepper.
3. Add to other cooked chicken and keep warm. In the same wok or skillet over medium heat, add remaining oil. Once hot, add onion and garlic and stir-fry for 2 minutes.
4. Add broccoli and stir-fry for 5 minutes or until broccoli is crisp tender.
5. Add soy sauce, sweet chili sauce, orange juice, chicken and cashews, if desired, and continue to stir-fry until heated through.
6. Cook rice according to package directions.
7. Serve topped with chicken and broccoli mixture.
